1. Gobi Manchurian
1 medium cauliflower, cut into florets
2 cloves of garlic, chopped
2 slices ginger, chopped
onion, finely sliced
1 stalk green onion, cut into medium
1 carrot, cut into matchsticks

Cauliflower Coating Batter:
3 tbsp flour
2 tbsp cornstarch
1/2 tsp salt
1/2 tsp ground pepper
sufficient boiled water
Sauce Ingredients:
2 tablespoons of tomato sauce
one tbsp sweet soy sauce
1 tbsp sugar
1 tsp salt
1/2 tsp ground pepper
1/2 tsp mushroom stock
3/4 cup boiled water
How to make a vegetarian menu recipe:
Soak cauliflower in hot water with a little salt, let stand a few moments, drain.
Mix all the ingredients for the cauliflower coating mixture, make the mixture tend to be thick, add the cauliflower pieces, stir until all parts of the cauliflower are covered in the mixture.
Fry them and put them one by one into the hot oil, use high heat. Fry until golden, remove, drain and set aside.
Mix all the sauce ingredients in a separate bowl, do a taste test.
Heat a little oil, sauté the chopped garlic, onion and ginger until fragrant, add the carrots, the sauce ingredients, cook until slightly thickened.
Add the fried cauliflower, stir well, after the sauce has absorbed, turn off the heat, add the chopped green onion and sesame seeds, stir well, remove from heat. Serve.
2. Soft Vegetable Cake
The main ingredient:
4 potatoes, peeled and steamed until cooked
3 scallions, thinly sliced
one carrot, thinly sliced
1 egg
1 tsp salt
sugar to taste
Ground spices:
2 cloves of garlic, crushed
2 red onions, puree

Mash the steamed potatoes and mix with the ground spices, salt and sugar to taste.
Stir well. Add vegetables, stir well. The shape of the cake circle.

3. Mushroom Cooked Silk Tofu
Ingredients:
1 piece Silken Tofu

½ tsp mushroom stock
½ tsp ground pepper
one tsp Vegetarian Mushroom Oyster Sauce
1 tsp soy sauce
1 tbsp sweet soy sauce
one small segment of ginger, grated
to taste salt, sugar
Mushroom soaking water
3 small stalks of spring onions, washed and finely chopped
Thickening:
1 tsp cornstarch/starch
3 tbsp water
How to make a vegetarian menu recipe:
Cut the tofu into squares, boil briefly, discard the water, set aside.
Soak the mushrooms and wash them clean. Set aside the mushroom soaking water, don’t throw it away. Then slice the mushrooms into small squares.
Heat a little oil, add ginger, sauté until fragrant. Then add the mushrooms that have been chopped/sliced earlier, stir-fry until fragrant.
Add a little salt, sugar, and a little mushroom soaking water then cover to let the mushrooms cook.
Then add the Veggie Flavored Meat Paste, stir well, add the mushroom soaking water again, bring to a boil then add the tofu.
Then season with salt and sugar to taste, mushroom broth, soy sauce, Vegetarian Mushroom Oyster Sauce, soy sauce, ground pepper, and stir until blended. Let the spices infuse.
After all the spices are well blended and absorbed, dissolve the cornstarch with water then add it to the tofu while stirring. Lastly, add the onions. Ready to be served.
4. Tempeh Steaks
Ingredients:
300 gr tempeh, steamed
3 cloves of garlic
1/2 tsp pepper
1 tsp salt
1 egg
all-purpose flour to taste
enough water
Sauce seasoning:
3 tbsp chili sauce
2 tablespoons of tomato sauce
1 tbsp oyster sauce
1 onion, cut into pieces
sliced tomatoes, if you like
How to make a vegetarian menu recipe:
Mash the tempeh until it crumbles while it’s warm, grind the garlic seasoning, pepper and salt, mix well with the tempeh. Form flat round tempeh dough.
Beat the eggs, dip the steak mixture and roll it in all-purpose flour.
Fry until browned or cooked.
For the sauce, sauté the onions and tomatoes until wilted, add all the sauce and let it bubble a bit, pour in a little water and cook until the sauce thickens.
Arrange the tempe steak on a plate and pour over the sauce. Ready to serve warm.
5. Simple Veggie Pasta
Ingredients:
200 gr spaghetti pasta, boil until soft, add a little olive oil, set aside
1/4 of an onion (optional)
2 cloves of garlic (optional)
5 broccoli florets (boiled, cut into pieces)
1/4 red bell pepper, diced
1/4 green bell pepper, diced
1 red tomato, diced
2 red chilies, sliced obliquely
1/2 tsp salt
1 tbsp soy sauce
1/2 tsp black pepper coarse powder
1 tsp apple cider vinegar
Mushroom broth and sesame oil to taste
1 tbsp olive oil
Basil flakes for sprinkling
How to make a vegetarian menu recipe:
Sauté the onions in olive oil until fragrant, add the peppers, chilies and tomatoes, cook until slightly wilted.
Add pasta, salt, soy sauce, vinegar, pepper, broth, stir.
Finally add the sesame oil and basil. Remove and serve while warm.
6. Vegan Oyster Mushroom Satay
The main ingredient:
500 gr fresh oyster mushrooms
Mushroom marinade:
4 shallots
4 cloves garlic
1 tsp coriander powder
1/2 tsp ground pepper
4 tbsp sweet soy sauce
1.5 tsp mushroom stock
5 red bird’s eye chilies (for medium spicy level)
1 tsp sesame oil
How to make a vegetarian menu recipe:
Wash the mushrooms while occasionally squeezing then drain. Then shred (not too small so it’s easy to stab).
Mix the mushrooms with the marinated ingredients that have been mashed then add the sesame oil and sweet soy sauce.
Mix well then arrange like satay on skewers, then let stand 30 minutes so that the spices are more absorbed.
Then bake, you can use a fancy pan, grill pan or Teflon. Lift and serve.
